Leftovers to Rice Pudding

Some nights I make something, and we eat it all. Other nights we don't even touch it. Well thats what happened with the rice from the other night. We didn't even eat a spoonful!  So, I put it in the fridge thinking we will eat it the next night. Well, we didn't but what I do like to do with my rice leftovers is Rice Pudding. Yum. I came across an easy recipe years ago, and haven't looked at rice leftovers the same since!

This recipe is great for rice you cooked, or even leftover from your chinese food!

Best part is you don't need to measure. It is one of those recipes that isn't an exact science!

What you need, Ingredients:
Leftover Rice ( or Fresh)
Milk ( I've used whole and 2% with success)
Raisins
Cinnamon and Sugar ( not pictured)
A pot to cook in


Place rice in pot, add milk to cover. See, no exact measuring needed!


Let rice soften back up, then add cinnamon, sugar and raisins.


Let cook, until nice and soft.  If it looks runny keep cooking, if dry add milk.


 Place in a bowl and enjoy!

Sometimes I warm it up, and add some cold milk to it and eat it like a cereal. Other times as is, and other times with vanilla ice cream. What isn't good with vanilla ice cream?
