This recipe was passed on to me from a dear friend, and this is the first time I have made it.
I of course made it on a whim and didn't have the exact ingredients but close enough! And it still came out yummy!
Here is the original recipe.
Here's mine:
2 tablespoons oil
2 medium onions
2 cloves garlic
2 cups garbanzo beans (just like I did here)
2 cups tomatoes and basil from garden ( just like I did here)
8 cups chicken stock
1 lb. chorizo casing removed and cut up
8 cups chicken stock
1 lb. spinach
Heat oil in pan, add onion and garlic. Cook down until golden yellow. Add beans, tomatoes and stock. Bring to a bubble add chorizo. Cook 5 minutes. Add spinach right before serving.
Such a fast soup!
