Bakes: Cinnamon Cloud Roll

Wow. Wow. Wow. 

This hit the spot. I was looking for a guilt free, clean treat and boy was I happy I put this together!


Do you see that? Do you realize that is a dinner plate? 
Yup. A dinner plate sized cinnamon roll with zero guilt attached!

This recipe can be looked at as three separate recipes. 
This recipe starts with cloud "bread" its a zero carb, clean bread alternative.
Once you learn the basic recipe, you can make the batch size as big or as little as you want or alter it like I did here by adding the cinnamon paste filling and frosting!



CINNAMON CLOUD ROLL
Makes 1 Large or 3 Small

2 eggs, separated
pinch of sea salt
2 oz cream cheese
1 packet Stevia in the Raw
1/4 teaspoon cinnamon

Cinnamon Roll Paste:
1 1/2 tablespoons butter
1/2 tablespoon cinnamon
2 packets Stevia in the Raw

Frosting:
3 oz cream cheese
2 tablespoons whole milk
1 packet Stevia in the Raw

Preheat oven to 350.


Whip eggs whites and sea salt until peaks form, and bowl can be flipped and whites do not fall out. Combine cream cheese, yolks, stevia and cinnamon until smooth ( I use my Magic Bullet!). Gently fold peaks and yolk mixture together. You want to combine without deflating the whites. Spread mixture onto a greased cookie sheet (use good old fashioned real butter!)


Create a paste using butter, cinnamon and stevia. Put paste into a plastic baggie. I actually mixed my paste right in the bag! No need to dirty another bowl! Cut the tip off. 


Swirl on top of your egg mixture.

Bake 14-17 minutes. Make your frosting! Mix ingredients together until smooth. 
Let Cloud Roll cool a few minutes before adding frosting, or frosting will melt.



NOTES: 
This is a large amount of frosting. You only need about 1/3 of the amount for one batch of the Cinnamon Cloud Roll. Can freeze remaining frosting for another day.

Cinnamon Cloud Roll will freeze too, just freeze separate from the frosting. Let thaw, add frosting.

Looking for a crunchier version, toast cinnamon roll before adding frosting! Yum!

Cooks: Healthy Homemade Ketchup

One of my resolutions this year is to maintain my weight loss, 72 pounds. 
One way of doing that is to not fall into old habits.
If you eat the way you've always eaten, well you will look the way you have always looked!

The program I followed to lose the weight, has you do it in phases. 
You get ready, you lose, you maintain and then you move on to life.
I am in the life phase. 
What that means is I continue to eat the food from the losing and maintaining phases plus I can start introducing other foods. When the scale goes up, the foods become "indulgences" when the scale maintains they can become daily happenings.

With all that said, let's get to the recipe!
This recipe is for any phase of the program I did.

Healthy Homemade Ketchup:

6 oz can tomato paste
1/3 c water
2 tbpn apple cider vinegar
1/4 tsp sea salt
1/4 teaspoon cinnamon
1-2 packets Stevia in the Raw
Pinch of Cayenne pepper

Mix all but last two ingredients together. Add one packet Stevia in the raw, add pinch of cayenne if you'd like, taste. If you like a sweeter ketchup add second packet Stevia in the raw.

If you are using this in P2, a little can be used without counting as a vegetable portion. If you are eating a lot, then you should count as some of your vegetable

Enjoy! This can also be enjoyed in other phases, the possibilities are endless!

New Year, New Me!

Wow, as usual I get ahead of myself. I think that I have everything in order and well. I don't. 
I know many can relate!

2016 has had ups, downs and in betweens. 
The ups would definitely include Baby Everett.
The downs well, who wants to talk about them. 

The only down I want to talk about is... well... I am down 72 lbs!
I started my journey on Memorial day, and I am so glad I took the plunge.

I am happier, healthier, have more energy and the best part...
 I am sleeping better with a four kids, than when I had only one!


Can you believe the difference?!?! I am still in shock that I did it!
My final goal was 75, and boy did I get close.

So now what? Well, I am going to maintain my loss and help others do the same!
