Pineapple Chicken

(Yes, I was bad and took my picture before the veggies were completely defrosted. Oops)

About a week or so ago, I asked over on facebook what I should do with a can of crushed pineapple as I had thought I grabbed a can of chunk pineapple.  So after a quick search over on pinterest, I found this recipe.

Normally I don't follow recipes 100%, but for this one I did for the ingredients, but not so much for the way I cooked it. Because I just pulled my chicken out of the freezer, I threw it all in the crockpot ( sans veggies) and let it cook for a couple hours. Once I was ready to eat I threw it in a big saucepan (because it didn't thicken up like it should have, lesson learned) and then threw  in a bag of stir fry veggies. Served over rice this will definitely be in our meal planning rotation. A perfect alternative to take out chinese!
