Ever since we moved into our house, I have had a garden. Each year I would get a little more brave and make the space a bit larger. Last year, my husband gave me some rhubarb plants as a gift. And this year we were able to reap the benefits!
Here's the recipe I used:
2 cups rhubarb ( washed in cold water and chopped)
4 cups strawberry (washed and chopped)
2/3 cups sugar
2 tbspn flour
Splash of lemon juice
Pinch of salt
1/4 tspn extract ( original recipe said almond, I used Vanilla)
Mix all wet ingredients in a bowl with whisk, toss Strawberry and Rhubarb to coat. Put in favorite pie crust!
Bake 15 minutes at 450, then lower heat to 350 for 30 minutes.
